Did you know that gingerbread dates from the 15th century and biscuits shaped like people were made in the 16th century? The first documented instance of figure-shaped gingerbread biscuits was at the Court of Queen Elizabeth 1. She had the gingerbread figures made and presented in the likeness of some of her important guests.

Time to do and skill level:

This recipe makes 20 biscuits. Preparation time is 2 hours and cooking time is 20 minutes. Adults will need to make the biscuits, and children can help with cutting them out.

Speculaas – Dutch Spiced Biscuits

Speculaas

Did you know that Dutch spiced biscuits, or Speculaas, are traditionally baked for Het Sint Nicolaasfeest (or the Feast of Saint Nicholas) in the Netherlands, which is on December 6th? The dough is traditionally shaped using hand-carved wooden moulds, but plain round biscuits can also be made.

This recipe makes 15 biscuits. Preparation time is 10 minutes and cooking time is 40 minutes. Adults will need to make the biscuits, and children can help with rolling them into balls and flattening them.
